Who knew desserts could be so …...Creative!  Kensington sits down with Innovative Indulgences’ Founder, Joe Lamondi, to discuss his unique twist on special event desserts :)

Event Planners are always looking for the newest most interesting thing to make a couple's special day more exciting and personal.  When we were first introduced to Joe and his delectable company we wondered how his dessert service could play a role at any special event. Now, we can't picture an event without him and his DELICIOUS desserts!  We may have gained a few pounds after gobbling up Joe' delightful treats but we are truly satisfied with his inventive approach to the "event dessert."

How did you into the culinary dessert industry?

I had been working in catering and event planning since I was in college, and always had a passion for being in the kitchen.  I came up with the idea for a warm cookie sundae event stand based on a dessert I had been making on my own for years.  Once I had the concept in place, I spent a few months playing around with different ingredients to create a great menu of unique “cookie pies.”

Thankfully, I knew lots of event planners and others in the industry, and I was able to get the name out through them and start doing events.  Each event we do is more and more exposure, and a way for people to see our product.

Have you always been a culinary buff?

Yes, I have always had a knack for being in the kitchen.  I am full-blooded Italian, so much of our family time is based around cooking and meals together.  My grandmother and mother are both incredible chefs, and I have been learning from them for my entire life.  My grandmother started me at two years old, kneading dough and mixing ingredients, so it was ingrained in me at a very early age.
 
 

Why cookies and desserts? What was the allure?

I love desserts because they are the conclusion of the meal: the last bite you will eat.  That

ecstatic feeling you get when you see the waiter walk up to your table with the perfect treat- that’s what I aim to create with each and every one of our cookie pies.   There is so much you can do with dessert for both taste and presentation, especially if you’re creative.

I love trying new combinations of ingredients, often times things you’ve never seen in a cookie, and then present them in a way that makes people’s eyes light up.

What is your favorite dessert invention?

In the kitchen, the giant Hobart mixer is my favorite invention.  It makes what we do so much easier, since we then don’t have to mix the doughs by hand.

What “sells” the most and what are the guest’s favorite choices?

Our most popular type of cookie pie is the brownie cookie bowl.  It is a cookie with the center scooped out and filled with brownie batter, then baked together.  We have a Turtle Brownie Cookie Bowl which is filled with walnuts and drizzled with caramel, and a Rainbow Brownie Cookie Bowl which has M&M’s baked in.

 

Other popular cookie pies are the Caramel Apple, and the Cookie Inception: a chocolate chip cookie, topped with fudge, cookie dough balls, and sprinkled with cookie bits.

We also have seasonal cookies and specials that are available.  Right Now we have a Maple Bacon Cookie, and Key-Lime Krunch, which is Key-lime flavored and topped with granola.

Can a couple “create” their own along with your help?

We do offer a customizable full service event stand that serves warm cookie pie sundaes or ice cream sundaes without the cookie pies.  Couples can choose which cookies they want to be served, as well as which toppings they’d like available to guests.

We have 14 different types of cookies, 8 different flavors of ice cream, and over 40 toppings to choose from, including hot fudge, warm caramel, whipped cream, sprinkles, Oreo’s, Reese’s, Butterfingers, etc…

Each guest can design their very own warm cookie sundae, customized to exactly how they want it.

Do you have Gluten-Free options?

We are in the process of making a gluten-free cookie that uses almond flour as a substitute.  Gluten-free is more popular than ever, so we are in the process of perfecting that before it is released.

Where do you work out of?

We have two kitchen locations: Highland Park and Chicago.  We offer local delivery all around the Chicagoland area, and nationwide shipping.  We also travel all over the state for catering events.

We’re hoping to open our first storefront within the next year.

What are the pros and cons of creating your own path in such a diverse industry?

Well, the main pro is of course that I can create my own desserts and release them as I please.  I’m someone who likes to tinker with ingredients and put together different combinations that I think will work together and see how it turns out, so that freedom is something that I love.

It is difficult to make it in this industry, but I find my product and services to be very unique.  When we are serving at events, frequently guest’s faces light up as they see our cookie pies and find out they get to design their own sundaes- that’s how I know I have a great product!

Do provide “full-service” (do you supply a staff for a wedding or event)?

Yes, we are.  For events such as weddings, birthdays, Bar/Bat Mitzvahs, or corporate, we offer a full service event stand that is fully staffed.  We travel to your location with all our own equipment, and set-up on site.

We offer a warm cookie sundae stand that feature our cookie pies served warm, topped with ice cream, and the guest’s choice of toppings.

We also have an “Indulgent Ice Cream Stand” which features ice cream sundaes with over 40 different topping options.  The toppings we offer for that stand are really fun!  Toppings you have never seen on an ice cream sundae!

What is your culinary experience? Schooling, classes, etc.?

Aside from being raised in the kitchen, I began working in catering at 19; everything from cooking and baking to event planning, so I really got my feet wet in the industry with that, and have continued on that path ever since.

What is the typical price range for these delights?

For our event stand, we have two sizes of cookies: standard and mini.  For the standard sized cookie sundaes, it’s $5.50 per person, which includes the cookie, ice cream, unlimited toppings, and paper goods (bowls, spoons, napkins).  For minis, it’s $3.00 per person.

What other fun culinary delights are you interested in?

Outside of desserts, I love to play with spices!  The hotter and spicier the better!  Of course as an Italian, my specialty is my marinara sauce. 

Whenever I cook or bake, I like to tweak what I’m making each time I make it until it’s perfected.

Who does all the cooking in your home? Do you ever get time off or are you constantly wowing your family with delicious new creations?

I do almost all of the cooking in my house.  Cooking and baking does not feel like work to me; if I could be in the kitchen for 12 hours a day, I would.
 
 

For holidays, my mom and I will do the cooking together.  We tend to make twice as much food as we should, but that’s what we always do.  Everyone that comes to our holiday parties takes home bags of food to go.

Travel about unique travel destinations, tips on traveling and fun activities for couples going on their honeymoon. 

How did you get into the travel business?

[Anna:]  I always had passion for traveling and exploring the world; I remember organizing trips for my classmates while in high school and what pleasure that gave me! Back then I knew that no matter what I do it has to do with travel.



What are some pluses and minuses of working in the travel business?
 
[Anna:]  There’s plenty of positive…. sites you get see around the world, meeting people from other cultures and backgrounds and having the opportunity to learn about them. I’d have to say that one negative would be there’s never enough time to do and experience everything!

 What are the top 5 hottest honeymoon destinations in the world and what are the top 5 most private and least traveled destinations?

[Anna:] my opinion might be bit different from the statistics but since you are asking me; there is: Hawaii (Maui and Kauai), French Polynesia, Saint Lucia in the Caribbean, and Santorini in Greece, and Maldives.


 
When it comes to the top 5 most private and least traveled I   would say: Peter Island and Mustique Island  in the Caribbean, Robinson Crusoe Island in Fiji, Tahaa Island in French Polynesia; Cayo Espanto in Belize

Key tips to traveling? (passports, vaccinations, safety, etc.):
 
[Anna:]  Always make sure your passport is valid for at least 6 months before you leave your country, make sure to check visa requirement as well as vaccinations – you don’t want to be denied access to a country and return home on the same day. Also, if you are not a US citizen make sure to bring you green card. Your travel agent should let you know what you need based on where you are traveling. Make sure to leave your hotel information with your friends or family, in case they need to reach you.



What to bring, what to buy?
 
[Anna:] Depends where you are gowning. I always travel with: sunscreen, bug repellant, bathing suite, first aid kit, medicine for upset stomach, umbrella and layer of clothing; even if you are traveling to warm climate you might need a sweater or a windbreaker.

Can you give us some examples of Fun and unique activities for couples on vacations?

 [Anna:] Oh possibilities are endless! Hot air balloon rides, bicycling around Amsterdam, cooking classes in Italy or Asia, horseback riding, scuba diving, hiking to hidden waterfalls, yachting and of course couple massages are just a few to list.

Best and most flexible airlines?

[Anna:] Always try to buy a package deal, or charters provided by tour operators or resorts.
 
Any current deals available?

[Anna:] There are always deals! Are you ready to go? Call me and I will give you all the info.
 
Where do you recommend to go for a honeymoon? Why?

[Anna:] I always recommend Sandals Resorts or Adults only properties – they are high end and all luxury inclusive. Great service, authentic cuisine, fresh ingredients and top shelf alcoholic beverages. In all Sandals Resorts all water activities are included even scuba diving; golf is included if there’s a golf course. Also they have the best beaches with the calmest waters.

Why stick to the old rent a hall have a lunch-in engagement party and bridal shower. Every couple is unique. Shouldn’t the pre-wedding activities be a celebration of who you are as a couple, what you each like, or how you fell in love? These three ideas may not be for everyone but they’re bound to get you thinking of your own spin on these old traditions. J

Sports Rivalry Party

For the couple that loves everything about their fiancé …except… their choice in a particular sports team.

Let’s use one of the biggest rivalries in football today, the Chicago Bears and Green Bay Packers. It’s safe to say I know this rivalry all too well since this describes my husband and I perfectly. J

Putting together a theme of this kind can be simple even if you don’t care much for the sport itself. List off the things you know: Team colors, footballs, jerseys, stadium, and logos. If possible plan this event on a game day where these two teams face each other.  Get everyone in the spirit of the game by decorating with yard line numbers, streamers in team colors and team logos. Create “Team Bride” & “Team Groom” jerseys for friends, family, and/or those who will be in the bridal party. Create a tailgate atmosphere by serving hamburgers and brats. Follow it up with some creative sweets; football shaped cookies, team color cupcakes, or a his/hers split cake. And don’t forget those family and friends that may not be as die hard as the lovely couple by creating football bingo to get them involved. It’s sure to be a hit for any budding “house divided”.

Around the World, or maybe just the country
If the couple happens to enjoy globetrotting or even just hitting up every state in the US together here’s a great theme to celebrate where they’ve been and/or where they are going. A great why to accomplish this is by giving every guest a different country or state. Instruct them to bring either a dish or dessert that represents the country they were given. Decorate with flags from the different countries and if possible add photos of the couple from their various travels. Top it off with a luggage or passport cake.

Pin-up Party
Why not think outside the box for a celebration with your ladies before the big day. Be inspired by the 50’s, rockabilly, or Rosie the Riveter.  Create an evening of beautification and turn all of those lovely ladies into Pin-Up Girls. Hire a hair stylist and make-up artist. Set up an appointment with a local photographer to capture the event and take some true to the era photos of the group. Top it off with champagne and wonderful sweets.

Often brides come into Kensington wanting to create the most lavish, glamorous, rock-star wedding reception by loading the reception venue with dramatic flowers and most of all….tall, eye catching pieces.  Although this is extremely beautiful [and costly], this is the time during the consultation when a smile comes to my face and I state, “You shouldn’t overwhelm nor underwhelm your guests.” Followed by, “I believe you have a budget and we will do our best to stick with it.” This is frequently trailed by the most confused look on the bride’s face.  [I blame pinterest] J

There is a bit of psychology that plays a role in the styling of your wedding. At Kensington, we typically use the formula of 30% tall and the remainder either medium or short pieces. The reason for this is if everything is tall, your eyes are forced to constantly look up.  Humans aren’t use to looking up all the time, they tend to prefer eye level.  If all of your pieces are tall that gives your guests a feeling of constantly having to position themselves (their heads and eyes) to focus on the delights of the ambiance (i.e. the flowers).  For many this can bring on a sense of anxiety because you do not feel as if you can behave in a normal manner (i.e. keep your head at eye level).  The same goes for couples that choose all low pieces. Positioning the pieces where one would consistently have to look down gives the guest(s) an underwhelming feeling and can at times be a bit boring.
 
Working with a formula such as 30% Tall, 40% Medium and 30% Short, you are able to dazzle your guests and keep their eyes appropriately moving around the room in awe of its beauty, without having their necks in pain from always tilting to look up or being disappointed by always looking down. 

 
On that note: having a budget doesn’t always mean you need to focus your efforts on only short looks. A simple cylinder look can definitely give elevation without breaking the bank.  If this isn’t an option try for two looks, a medium and a short. That way you can give the guests a couple different looks for them to find appealing. A great floral production designer will be able to work with you and your look to make sure that you are happy, your guests are pleased and your bank remains intact.
 
Remember to shop around and see what creative designers can do for you.  Having a budget, doesn’t always mean that you do not have options J 

Leave the Rockstar weddings….well… to the Rockstars and enjoy a classic gorgeous look without feeling that you need to wow everyone with the tallest lushest pieces. It’s your day…as long as you are happy, your guests will be happy!

He Finally Popped the Question…Now What?

            Where to begin? Most brides want to run to the nearest bridal shop and “Say Yes to the Dress,” but that would actually be the wrong way to begin your wedding/marriage. Planning to find your wedding dress prior to doing anything else can seem like a daunting task that can make you uncomfortable [if you don’t find it right away] and it can eat up a great deal of your budget without you even knowing it.  Helpful hint…begin with the following: set your budget, size of guest list, location and style of your wedding, along with the season and time of day you would like your wedding to take place.

            Setting your budget is one of the most crucial parts of your wedding day and often overlooked and not discussed. When not discussing a budget with your fiancé and family, it can lead to tension and arguments followed by hard feelings and animosity. By setting a budget you can start prioritizing what the most important things are to both you and your fiancé to make your special day perfect!

Sit down with your fiancé and on separate sheets list what is most important to you, and then see where your lists match and where they don’t.  This is the time when you will need to start to compromise. Yes, the wedding day is considered the “Bride’s” day but it is also the first day of the rest of your married lives together and a good time to start meeting each other in the middle. If this becomes overwhelming or your lists are far too different from each other’s, it may be a good time to meet with an Event Planner and see if he/she has any ideas on how to help.
           
            Next is the size of your guest list. Remember if you have a budget of 20k or less, having 800 guests is going to be difficult to accomplish. Even the savviest Event Planner will find that a bit difficult and try to steer you towards cutting your guest list or raising your budget. This is also a great time to figure out where you would like to get married. If you have fallen in love with a specific venue location make sure that their space can hold your guests comfortably.  If you have a 300 person guest list but your venue has a maximum capacity of  150 people, you either need to cut your guest list or find a new venue to fall in love with. (hint: small ways to save on budget… create a smaller guest list…more guests equals more invitations and stamps…those add up!)


            Following your guest list and venue is your wedding style. Are you modern chic? Vintage? Romantic and whimsical? Eco-friendly? Etc. Sit down with your fiancé and ask him how he pictures your big day together. Does he see waterfalls, a wooded location, a marble museum, a hotel in a major metropolis? All these questions contribute to the style the two of you want to encompass in the theme of your wedding day! Make sure it fits both of your personalities otherwise it can feel forced and phony.  Example: If you two are all about the country and that is how your family and friends always see you [surrounded by hay barrels and sunflowers] it would be a bit out of character to have your wedding set at the Art Institute of Chicago. Now if you have always dreamed of that, by all means, fulfill your wish but if it seems a bit uncomfortable then go with your gut!


            Lastly, the most magical element… the season! Do you love the colors of the leaves changing in the fall? Could you just picture that breathtaking backdrop behind you and the love of your life? Do you love how the snow falls and how everything is covered in white with bare trees all around and glistening lights? Or the new blooms of spring popping up everywhere. Or even the warmth of the sun hitting your face in mid-summer and water all around? What do you picture when you think of your big day?

Planning the time you would like your wedding to take place depends on the season you choose. Winter months have less day light to work with and will need to have an earlier planned weddings if you plan to take great snowy pictures outside.  Summer weddings can begin much later since the day light lasts so much longer but be very careful if you are planning a sunset wedding. Make should you time it correctly if you would like to capture the most perfect backdrop for your photographs.


            No matter what you decide, remember this is your special day and it should be as you have always dreamed but ….it is just one day or at times a weekend (depending on culture and tradition). Make sure that you make the right decisions for the both of you and your futures together.  This should be a joyous time and not one of worry or doubt. Prioritizing from the beginning keeps you focused on the goal without letting the wedding get bigger than the two of you!

The man of your dreams just popped the question and instead of thinking about the flowers and cake, you are stuck on “How will I look?” “The dress…can’t be in black, can it?” “Black always makes me look thinner!” You aren’t alone in this and many brides wonder how they will look in their wedding dress and what impression they will make.

This is not the time to consider a crash diet or strategize some outlandish goal of losing 300lbs by your big day. Instead, think of how to implement “healthy” into this new chapter in your life and make sure to get your fiancé on board. Remember...the little things go a long way!

Start by walking in the mornings before work or evenings after dinner. This can be a “no wedding talk” zone for both you and your fiancé to just enjoy each other on a stroll together. Walking for a minimum of 30 minutes provides amazing benefits[1] that enhance mental well being, improves blood pressure and blood sugar levels, walking reduces the risk of coronary heart disease, osteoporosis, breast and colon cancer, promotes weight loss and it gives you the chance to just connect with your fiancé in another way. Adding lemon to your morning routine may seem too easy and simple to be true but over time you will experience all the rewards that this little magical fruit has to offer!

One of the most wonderful things about living in one of the greatest cities in the world (Chicago, of course!) is being able to get married in a town with so much history, culture and diversity. The home of the Blackhawks, deep dish pizza and Cloud Gate has become an epicenter for Midwest brides and grooms, becoming a source of inspiration and a leader in modern luxury.  As a Chicago bride or groom, there are so many resources here in the city and surrounding suburbs that are available to you to make your wedding day as special and as magical as you dreamed it to be. 

On Sunday, October 26th, I had the pleasure to experience a bridal expo like no other: Oak Street’s 8th Annual Charitable Wedding Walk sponsored by Modern Luxury Brides. Now when I first heard of the event, I had no idea what to expect. Was this a standard wedding expo but disguised the name to make it more appealing?  Was this a walkathon on Lake Shore Drive? Am I wearing the right shoes to be doing all of this walking? Nothing could have prepared me for what I was about to experience…

I hopped in a cab and arrived at 980 N Michigan Ave, arriving at Spiaggia Private Events. When we arrived (I dragged a skeptical friend along for the mysterious ride, why go down the rabbit hole alone?) the CS team checked us in, and from the next room over we could hear a string quartet still playing as other staff members began to tear down the space. We arrived a little late for the festivities there, but the CS team assured us we still have plenty of time to see and experience the rest of the Wedding Walk. We were handed a “treasure map” with stores and businesses along Oak Street and the surrounding streets that were participating, what we were to see and experience before our final destination. We grabbed our complimentary tote and off on our journey down Oak Street; Chicago’s own 5th Avenue, we went.

We arrived at our first destination, Lanvin, and as soon as we walked in, we were greeted by the wonderful Lanvin team as well as treats from Vanille Patisserie. We blinked and next thing we knew we were on an elevator to the 3rd floor to see the spring 2015 bridal couture collection by the brand. And that’s when it hit me… I am experiencing Chicago bridal luxury at its very finest! (Eat your heart out Carrie Bradshaw!!) From there we continued on our journey, enjoying the Indian summer weather, skipping from Jewelry stores Lester Lampert and Buccellati, stopping by the Perfect Setting for some entertaining ideas, and peeking at the stylish collections of Carolina Herrera and Kate Spade. Each stop we were greeted by brand experts who provided extraordinary service, providing a one on one experience like no other.  Each retail store had some of Chicago’s top bakeries providing samples of their work, including Elysia Root Cakes and Toni Patisserie and Café. Other locations provided champagne and hors d’oeuvres to the guests journeying on this wedding walk. We were running out of time so we did skip a few spots, however we made sure to stop by The Thompson Hotel and Gibson’s Steakhouse, checking out spaces to host smaller, intimate functions such as a rehearsal dinner or bridal shower.

And of course they save the best stop for last. We arrived at a modern luxury hotel like no other… The Waldorf Astoria Chicago. As we turned the corner, we knew we were exactly where thousands of other brides dreamed of being. We arrived to the 3rd floor ballrooms where we met with other vendors Elizabeth Grace (one of my favorites!), David Rothstein Music, Bella Bridesmaids, Spin-Spun and BBJ Linens. And we received our “Swag Bag”, which officially puts any other bag that I have ever received in the past to shame. From treats to discounts to special offers this bag had EXACTLY everything a Chicago luxury bride or groom needed to plan and execute their perfect day.

As an up-and-coming Wedding and Event Planner here in the city with Kensington Florals & Events, I highly recommend this experience to any Bride or Groom looking for a different experience. You get exposed to the higher end of the wedding industry, get one-on-one service at your own pace, and really control who and what you want to see! This is also great for brides who might not have a luxury budget, but can come to this event for inspiration, and really see what the city of Chicago has to offer. Would I go next year? Of course! Maybe I can bring a few more of you brides and grooms down the rabbit hole with me…
